I’m not Vegan but I have become interested in Vegan meals lately and replacing meat with veges most weeknights is not only better for my health but for the environment.
This Simple Stir Fry Comes from Madeline Olivia’s Versatile Vegan Cookbook.
Packed with tonnes of Vegan recipes for Breakfast, Lunch, Dinner, Snacks etc. I was a bit apprehensive about buying this as her Youtube channel has so many Vegan Recipies but the Cookbook is totally worth it.
We’ve been buying the readymade Stir Fry Packs from Asda for years.
I find them a bit expensive for a small meal.
And the fact that taking 15 minutes to not only cut my own vegetables but also adding more vegetables made a HUGE difference to the overall flavour of the stir fry.
I’ll be using some ingredients in other meals as well so that’s already a money saver!
I ended up using Asda Egg Noodles in these but if you are Vegan, there are tonnes of other options.
This was TASTY and didn’t take a long time to chop up and then cook.
I’d highly recommend this recipe for anyone looking for a Vegan weeknight meal.
